Hello, I am new here. I think that this is a fantastic platform to learn coding and share advice about it. Anyway, I am curious about the possibility of having my github repositories checked by official Exercism mentors. Is there the possibility to ask for that, or are mentors meant to correct just the official “exercism” exercises?

You could post a link and ask for feedback. However typically mentors review a single exercise. Code reviews in general tend to focus on a small piece of code/change. If your repo is large, reviewing a large corpus of code tends to be a large project.
