Hi there.
I’m a teacher in a school and was wondering if there was a way for me to set up a class for students to access? Ideally I would like to monitor progress and set exercises etc

I’m pretty sure the short answer is no. Though you could use the private mentoring to mentor students, or manually check their published solutions.
There also is GitHub synchronisation, where you can ask students to synchronise to a repository managed by your organisation.
Note, the syncer is restricted to insiders.
Honestly, the private mentoring IsaacG mentioned seems like your best option here and some teachers have used that in the past.
You hand out the exercise to do, the student does it, and then they submit the private mentoring link for that exercise. That lets you review what they did, but it should also add that student and their discussion to your mentoring session history. That means you can easily search for all the discussions with a particular student to see their overall progress or search for all the discussions for a particular exercise to see how many students have completed the exercise. It’s all in the website in a convenient setup so you don’t need students to configure an external component like GitHub to store their solutions.
